Perfect for fish.

Its thin and flexible blade is ideal for cutting and filleting fish and removing the skin and guts. The blade can also be used to slice meat and fish, as well as foie gras or terrine.

The handle is extremely resistant to temperature, water and shock.

The curved tip means food can be sliced in one go. The blade remains rigid and stable when cutting. The continuous cutting edge frees up the heel of the blade and makes sharpening easier.

We use modified Sandvik 12C27 stainless steel. It is anti-corrosive thanks to the addition of chromium and does not require special maintenance. Its carbon content of at least 0.40% gives an excellent cutting edge. Blade hardness 57-58 HRC.

The molded handle is made of fiberglass polyoxymethylene which ensures excellent wear and water resistance and excellent impact resistance. Thanks to its curved shape and triangular profile, it provides a secure and comfortable grip.

The full blade runs the length of the handle. The knife is sturdy and well balanced.
